There’s a lot of placeholder content, but I’m interested in getting people’s feedback on the project and I really think I’ve figured out how to get the most bang for my buck with Unity.

To put it briefly, the problem is that your team is trying to cram too much functionality into a game that should probably be treated as a demo.
First, your demo should be about showing your game to potential purchasers. It should be about demonstrating the fun your game has to offer. It shouldn’t be a tutorial on how to make a video game. A video game is a specific type of software with a specific set of features, which you are trying to cram into the genre of an action game demo. It sounds like you are trying to, not just show the game, but also show off your particular talent for game making.
Second, you are trying to release the game at its best. If you spend a lot of time building up the demo, then the game will be at its worst. If you want a successful game, then don’t waste time finishing your game.
Third, you seem to be thinking that you can split the resources of a student developer into two people. This is completely incorrect. You can only code at a state that a professional developer would be at, you cannot simultaneously release and finish the game without a fully functional team.
And fourth, your work on this project is rather inefficient. You have a game where there is barely any feedback at all. You have a game where you are using multiple resources with barely any target audience in sight. You seem to be trying to flail
